I had to post this picture of Cali. She is beginning to look like a toddler to me and certainly starting to act like one too. At this point she is fully aware of what makes her want to throw fits, she understands when I tell her to go get certain things like her baby and the story Goldie Locks Has Chicken Pox, wanting to jump, spin in circles, and do summersaults (although she only knows how to attempt these summersaults, not execute them completely), trying to keep the water in the tub when I unplug the drain, brushing her teeth and blowing her nose (both of which she doesn't really know how to do), knowing exactly what she wants to eat (this would include cheese, bread, apples, peanut butter, oatmeal, and bananas....NOTHING else!! Oh wait, anything sweet and unhealthy). She is learning so many new things and I continue to be excited with each new discovery!! I think my most favorite part of her growing older is seeing how she plays with her dad. Casey is so in love with Cali and we both just can't get enough of her!

Drum roll please....
...it's a GIRL!!! Casey and I couldn't be happier to be having another girl in the family. It will be so fun for Cali to have a sister so close in age. We could not wait to find out the gender, so once again we went to Fetal Fotos. Some may think going this early is sketchy, but we don't:) Here she is. The technician said she was quite the mover! I kept thinking, "Oh no!", Cali was quite the mover and this one is moving even more:/

Good for you cookies!!!
I took a recipe from Ellie Kreiger and decided to tweak it a bit. Her cookie recipe is called, Kitchen Sink Cookies, so if you want her exact recipe you can go to foodnetwork.com. They turned out really good, but remember if you make these don't expect your traditional chocolate chip oatmeal cookie:) They are healthy!
Ingredients:
-2 Tbls. unsalted butter, room temp
- 2 Tbls. canola oil
- 1/3 cup light brown sugar, packed
- 1 Tbls agave nectar, or you could use honey
- 1/4 cup applesauce
- 1 egg white
- 1 tsp vanilla
- 2/3 cup whole-wheat pastry flour, I use Bob's Red Mill
- 1 cup oatmeal
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1/4 cup chopped walnuts
- 2 ounces dark chocolate
Preheat the oven to 375 degrees F.
Combine butter, oil, brown sugar, and agave nectar in a bowl. Mix on med-high speed, stopping occasionally to scrape down the bowl, until mixture is light and fluffy, about 2 minutes. Add applesauce, egg white, and vanilla to mixture. In a separate bowl combine flour, oatmeal, salt, and baking soda. Sift the flour before combining all dry ingredients. If you are like me and do not have a sifter, use a whisk to make the flour light and fluffy. Add dry ingredients to the wet mix until just combined. Fold in the walnuts and chocolate.
This recipe does not make a ton of dough, so your cookie size will be small. Although that is what helps to make these lower in calorie:) I used about a tablespoon size for each cookie. Because these cookies do not call for a large amount of butter, you do not have to worry about them spreading out while being cooked. On a regular cookie sheet I was able to fit 16 cookies. Maybe place them 1 1/2 inches apart. Cook for 8-10 minutes and cool on racks.
Makes about 30 cookies.

Thanks Steph!

Christmas in Texas!
This year our Christmas was spent in good ol' Magnolia!! This year was especially fun because for the first time the ENTIRE family was together. Our once family of six has now grown to a family of 11!! I was anxious to see how Cali would react to all the fun and excitement on Christmas morning. She was not near as excited as the rest of us adults:) In fact her most favorite part of opening the presents was tearing apart some tissue paper. Let me add that her tearing was done in teeny tiny little pieces. Whatever keeps her entertained works for me!
Thanks family for making this Christmas one of my most memorable yet!!
